The Cotes d’Auxerre sits at the very top of Burgundy, next to Chablis and just south of Champagne’s Cote des Bar. This Pinot Noir comes from six parcels planted in clay and limestone soils. Fermentation is 70% whole cluster with foot stomping before one year of aging in neutral barrel and stainless steel. Has a concentrated bouquet of crushed violet flowers and dark cherry with an exotic spice inflicted overtone. Lithe on the palate with soft tannins, the flavors trend toward red currant, dried blueberries and fleshy raspberries with a stemmy herbaceous quality owing to the use of whole clusters.
